Where the numbers come from

The current pace figure uses the minutes-per-report value you entered. The Staffroom figure uses 3 minutes per report, which is the average time teachers spend reviewing and editing a Staffroom draft. Most of the thinking and drafting is done before you open the report, based on the notes you have been adding through the term.

The finish date counts only weekdays, on the assumption that the time you enter is time you are setting aside during the working week. It does not account for evenings or weekends, though we know perfectly well that is usually where report writing actually happens.
